Cirino’s Ribeye Medallions Wrapped in Bacon

Make your meat-lovers drool with delight… almost effortlessly.

Ingredients:

1 – 1½ lbs of ribeye steak

¼ – ½ cup Cirino’s Bloody Mary Mix

¼ – ½ lb thick cut, high quality bacon

1 large Ziploc bag

1 Tbsp olive oil (for stovetop method)

Toothpicks (not flat)

  1. Cut ribeye steak into 1½ ” cubes.
  2. Place steak cubes into Ziploc bag. Add Cirino’s Bloody Mary Mix until covered.
  3. Place in refrigerator and marinate for at least 30 minutes.
  4. Remove from refrigerator, drain and place steak cubes on plate or in dish. Let come to room temperature.
  5. Lightly pat steak cubes dry, then wrap with a bacon strip – overlapping ends of bacon and securing with toothpick.

Stove top cooking

  1. Heat pan (heavy or cast iron preferred) on high heat.
  2. When pan is hot, add olive oil – just enough to coat bottom of pan.
  3. When oil gets hot, add bacon-wrapped medallions. Leave enough room so you can turn medallions on side to crisp bacon.
  4. Sear each side to seal in flavors and crisp bacon around, then serve immediately.

Oven cooking

  1. Preheat oven to 400 degrees.
  2. Cover baking sheet with aluminum foil and place bacon-wrapped medallions on sheet.
  3. Bake in oven for 15 minutes.
  4. Switch oven to BROIL at the same temperature for 1-2 minutes to slightly crisp bacon. Watch closely so you don’t overcook, then serve immediately.
