Toni’s Stuffed Peppers

Create a ‘gourmet meal’ without breaking the bank – or your back.

Ingredients:

2 bell peppers

1 large can diced tomatoes (~28 oz)

1½ lb of ground meat, your choice

1 med onion, chopped

4 cloves of garlic

1½ tsp oregano

1½ tsp basil

1 tsp onion salt

  1. Brown ground meat in frying pan. Drain fat when browned.
  2. Return browned meat to pan over medium heat and add Cirino’s Bloody Mary mix, fresh onions and minced garlic. Finish cooking meat to infuse flavors.
  3. Add diced tomatoes and seasonings to pan with ground meat mix. Simmer and reduce tomato juice to thicken mixture.
  4. While mixture is reducing, cut bell peppers in half and remove seeds. Bring water with a pinch of salt to a boil, then place cleaned pepper halves in boiling water for 2 minutes.
  5. Turn on oven to preheat to 350 degrees while blanching peppers.
  6. Drain water from peppers, place on greased 9×9 oven pan.
  7. Pile the reduced meat mixture into the pepper halves – with a little overflow around them if desired. Top with your choice of shredded cheese.
  8. Bake in oven at 350 degrees for 20 minutes, or until cheese is melted and lightly browned.
  9. Remove from oven, place pepper on plate, garnish with a little overflow and parsley then serve with a fork and knife.

3 oz Cirino’s Bloody Mary Mix

Shredded mozzarella or Colby jack cheese

Salt
